1 cup butter softened
3/4 cup sugar
2 cups unsifted flour
1/2 cup cocoa
1/2 tsp. peppermint
extract
10 oz. semi-sweet
chocolate pieces melted
1/2 tsp. peppermint
extract
Mix butter and sugar
until well blended. Add flour, cocoa and 1/2 tsp. peppermint extract and
mix well. Shape into 9x13" log, wrap in plastic and chill 1 hour.
Preheat oven to 350*.
Cut dough crosswise
into 1/4 inch slices. Place 2" apart on ungreased baking sheet. Bake for
10 minutes. Let cool completely.
Add 1/2 tsp. peppermint
extract to melted chocolate. Dip cookies halfway into melted chocolate
and place on waxed paper. Chill til set!
