BREAKFAST CASSEROLE

(I call this my Visitor's Casserole because it can be made ahead and leave me time to visit with my visitors.)

                    1 lb. mild sausage or bacon
                    1/2 lb  grated cheddar cheese
                    8 slices of bread with crust removed
              Beat together with fork:
                    6  eggs
                    2  cups milk
                    1  tsp. dry mustard
                    dash of salt and black pepper
               Grease casserole dish with butter
               Layer ingredients in order as listed
               Cover bottom of dish with bread
               Add the cheese
               Crumble sausage or bacon
               Pour egg mixture, distributing evenly
               Refrigerate overnight.  
                    Bake 350   30-35 minutes




CHICKEN POT PIE

(I always make this dish for my stepson who never misses an opportunity on his visits to lean close and whisper, "Did you make Chicken Pot Pie?)

        In mixing bowl:
               2  cans  Cream of Potato Soup
               1  16oz  can mixed vegetables, drained
               2  cups  cooked chicken pieces
               1/2  cup  milk
               1/2  tsp.  thyme
               1/2  tsp.  black pepper
               2  pie crusts  (I use Pillsbury in the refrigerated section)
         Arrange your 1st pie crust in bottom of casserold dish
         Fill with ingredients from mixing bowl
         Place top crust, seal edges and slit top
                Bake 375       40-45 minutes

SHEPARD PIE


(Cousin Cory considers herself a pot cooker, as in pot of beans or crockpot, but she surprisingly came up with this exceptionally easy casserole dish!)

      Mix and place in casserole dish:    
                 1 1/2 - 2  lbs  ground beef, cooked and drained
                 1 can  tomato soup
                 1 can  mixed vegetables
                 salt and pepper  
       Top with mashed potatos
       Sprinkle with cheese last 5 minutes baking time
                 Bake 350    30-35 min (till potatos are lightly browned)



APPLE CRISP

(This is a nice alternative to my husband's favorite dessert, apple pie.)

    Arrange in bottom of greased baking dish:
                      2 cups sliced apples
    Combine in mixing bowl and sprinkle over apples:
                      2/3  cups packed brown sugar
                      1/2  cup flour
                      1/2  cup oats
                      3/4  tsp cinnamon
                      3/4  tsp nutmeg
                      1/3  cup butter or margaine
    Bake 375 until apples are tender and topping is golden brown.
