Boy, I wish I could go back to bed right now. And I wish the kids were already in school. What is this odd mood about? And why aren't I in bed already? Halloween! Last night, Bryan told me to tell his mother to bring home cornbread mix. Suspicious, I asked why. "You remember--you're supposed to make that cornbread dessert." "I thought I told you that you were thinking of the coffeecake and I wasn't going to do it." "But, I'm supposed to bring it tomorrow for the party at school." The result was by the time my sister brought home the mix, it was around 10PM and I was just too tired to stay up and bake. Whenever I go to sleep before midnight, I get up for a couple of hours in the middle of the night. So, at 2:53 in the morning, I'm wandering around the kitchen wondering how I'm going to pull this off. About 2 minutes ago, I got up from this computer and pulled the dessert out of the oven. So, this is how it happened. I put the Jiffy cornbread [2 boxes] mix in a mixing bowl, went to the refrigerator to get apples to cut up, and found the apples unacceptable as there were 4 apples of three different kinds. However, I did find that my sis and bro-in-law had brought home pizza. So, I stuck a couple of slices in the microwave. Then I set the oven to heat and got out the cast iron frying pans in which we always cook the cornbread. What I ended up tossing in the cornbread mix was-- 2 eggs, a 20 oz. can of crushed pineapple [juice and all], about 3/4 c. of sugar, some milk [maybe 1/4 c.] and some [1/2 t.?] pumpkin pie spice. The batter tasted wonderful and the end product smells delicious. I've always wanted to write a cookbook. Unfortunately, most cookbook publishers want more precise directions. I'm a look, feel, and smell cook. I don't measure the herbs and spices very often. I just shake or pour into the pot or bowl. I tell if the batter is the right consistency by look and the feel of it when I stir it. Excuse me, but now that my baking is done, I'm going back to bed. ![]() |
