IRON SKILLET PINEAPPLE UP-SIDE DOWN CAKE

1/4 cup butter
1 cup brown sugar
1 can pineapple rings (reserve the juice)

Melt butter and sugar slowly in an iron skillet.
When blended arrange pineapple rings and set aside.

1/3 cup butter
2/3 cup sugar
2 eggs, separated
1 1/2 cup flour
3 teaspoons baking powder
2/3 teaspoon vanilla
pinch of salt

Cream butter and sugar well.  Beat the egg yolks well
and add to the butter and sugar mixture, mix well.  Sift
flour, salt and baking powder and add alternately with
the pineapple juice.  Whip the egg whites with vanilla
until stiff.  Fold into flour mixture.  Pour over fruit and
bake at 350 for 40 to 50 minutes.  Turn out onto
serving plate.
