Hot-Water Corn Bread



  • 1 cup corn meal
  • 1/4 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 Tablespoon sugar
  • 2/3 cup HOT water

Mix all ingredients. If it is too soupy, just add
a little more meal and flour. If not soupy enough,
just add a little more hot water.

Put a very small amount of vegetable oil
(about 1/2 cup; I use Canola oil)
in frying pan. When oil is hot, drop mixture by
Tablespoons full, making patties. Turn to brown on each side.
