Hot-Water Corn Bread
- 1 cup corn meal
- 1/4 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 Tablespoon sugar
- 2/3 cup HOT water
Mix all ingredients. If it is too soupy, just add
a little more meal and flour. If not soupy enough,
just add a little more hot water.
Put a very small amount of vegetable oil
(about 1/2 cup; I use Canola oil) in frying pan. When
oil is hot, drop mixture by Tablespoons full, making
patties. Turn to brown on each side.
