is an informative book about the art of making Japanese-style
pickles. Featuring more than 100 recipes and color
photographs, Tsukemono offers easy to follow
instructions and information about pickling.

Most of the ingredients called for by the author
are available in grocery stores. Those like miso,
mirin, and rice bran are found in specialty Japanese stores.

I like this book for its pictures, since they reminded me
of my time in Japan. Try golden yellow takuan,
pickled daikon or highly salty umeboshi, pickled plum.
A good introduction to an important part of the Japanese diet.
