RATATOUILLE

This is a summer vegetable dish, rich in vitamins and absolutely cholesterol free. On the other hand ingredients are easy to locate all year round.

2 large green peppers,


4 zucchini,
1 large eggplant,
4 potatoes,all cut into 2 inch long strips.
1 0nion, diced,
2 garlic cloves, diced.
Basil

Mix together.
Sprinkle with salt and pepper to taste.
Sprinkle with 1/2 cup sunflower oil.
Bake uncovered at 400 F for 1 - 1 1/4 hrs or until potatoes are well done.
Serve warm.
