PAELLA. For 4

3 onions, cut up
1/4 cup oil
1 cup Long Grain rice
2 1/2 cups hot water
2 tbsp parsley, chopped
1 tsp salt
1/2 tsp pepper
1/4 tsp allspice
1/4 cup cinnamon
1/2 tsp paprika

Stir fry the onion in 1/4 cup of oil until golden.
Add 1 cup of Long Grain rice and stir fry for 5 minutes.
Add all the other ingredients, bring to a boil, then simmer for 15 minutes.
Add:
1/2 cup hot water plus the water from a can of baby clams and simmer, covered for 5 more minutes.
Add:
1/2 can of drained peas
1 can of mussels in oil
1 can of polyp in oil
1 can of baby clams, drained

Simmer, covered, for 5 - 10 more minutes.
Serve hot.
