FETTUCCINE ALFREDO For 4

400 g fettuccine
4 tbsp butter
6-8 oz cooked ham, diced
1 egg yolk
parmesan cheese, grated
romano cheese, grated
1/2 cup whipping cream 35%
pepper

Boil fettuccine in abundant salt water,"al dente".
In a skillet melt the butter and stir fry the ham, briefly.
As soon as fettuccine are drained, return them back to the pan, over a low fire. Add ham, egg yolk, pepper and cream. Stir well.
Add abundant cheese, stir and serve hot, possibly in preheated dishes.
