BEEF STEW WITH POTATOES For 4

2 lb beef stew meat
4 tbsp oil
1 garlic clove, crushed
1 can peeled tomatoes
2 lb potatoes, diced

Stir fry meat with oil and garlic until golden.
Add tomatoes (they can be replaced with 1 can of tomato paste diluted with 2 cups of hot water), over low fire.
Clean and dice potatoes to 1" cubes. Cook until everything is tender. Add some boiling water if the mixture dries out too much.
Serve warm.
