Pollo alla diavola
(Spatchcocked chicken)
One 2 1/4 lb young chicken
1 tsp dry sage
a little oil
salt
pepper
Rinse the chicken inside and out. Cut in half through the back and butterfly it by pounding .
Spread oil over it.
Sprinkle evenly the sage, salt and pepper.
Place the chicken in a wide pan or large skillet where it can spread out. Place a cover over it and weights over the cover.
Cook on top of the stove, over moderate heat, for about 20 minutes.
