PAELLA - For 4
3 onions
1/4 cup olive oil
1 cup long grain rice
2 « cups hot water
2 tbsp parsley, chopped
1 tbsp salt
« tsp pepper
1/4 tsp allspice
1/4 tsp cinnamon
« tsp paprika
1 can baby clams

Stir fry the onions. When golden, add the rice and stir for a couple minutes at medium heat.
Add the hot water, and the rest of the ingredients except for the baby clams.
Cover, reduce the heat to simmer (a notch higher than the lowest setting) and wait 15 minutes.
Then add « cup of hot water plus the clam's own water, stir and let it simmer, covered, for another 5 minutes.
At this point add:

« can of peas (drained)
1 can of mussels, packed in oil
1 can of octopus, packed in oil
The baby clams from the drained can mentioned above.

Stir, and let it simmer, covered, for another 5 -10 minutes. Serve hot.
