2 lb yams
1/2 cup orange
marmalade
1/2 cup orange juice
1/2 tsp grated ginger
1 tsp French mustard
1 tsp brandy
Cut cleaned yams in chunks, place in a steamer and cook for 5
minutes.
Preheat oven at 375 F.
Place in a pyrex dish with sauce prepared as follows:
Mix marmalade, juice ginger and mustard in a small pan. Cook over
medium fire for 10 minutes.
Remove from fire and add butter and brandy. Place back over
medium fire for 2-3 minutes.
Bake at 375 F for 30 minutes.
