SWEET AND SOUR PEPPERS For 4

2 lbs green peppers, small size
4 tbsp oil
1 onion, chopped
1 tbsp brown sugar
2 tbsp vinegar
salt

Wash the peppers, quarter and remove seeds. Pat dry.

Stir fry in hot oil with onion and salt, over medium fire. Cook until their own water has evaporated.

Fire should be regulated so that peppers are tender at the same time the water has evaporated.

At this point add the brown sugar and vinegar and stir for another minute, over medium fire.

Serve hot or at room temperature.
