SOUR CREAM CHEESECAKE* For 8

1 1/2 cups shortbread cookie crumbs
12 oz cottage cheese
1/2 cup sweet butter, melted
1 tbsp lemon juice
1/4 tsp grated lemon rind
1 egg, lightly beaten
1/4 cup sifted icing sugar
1/8 tsp vanilla extract
1 cup sour cream
1/4 cup raisins,optional
1/4 cup chocolate chips, optional

Line 8" springform pan with greased and floured aluminum foil.
Combine cookie crumbs and melted butter, mixing well. Press cookie mixture firmly over bottom and up sides of prepared pan.
Drain cottage cheese well and place in blender. Blend until free of large lumps.
Preheat oven at 350 F.
Combine cottage cheese, lemon juice, lemon rind, egg, icing sugar and vanilla extract in large bowl and mix well. Fold in sour cream.
Spoon cheese mixture evenly over crust and smooth the top.
Bake at 350 F for about 50 minutes. Cool well. Refrigerate overnight.
Chocolate chips or raisins can be added to cheese mixture before baking, if desired.
