COFFEE CAKE WITH RICOTTA*

300 g flour
300 g sugar
300 g ricotta
3 eggs
1 oz liqueur
pinch of salt
1 tsp baking powder,heaping
grated zest of orange or lemon

Preheat the oven at 400 F.
Mix dry ingredients by hand. Continue mixing while adding one egg at a time.
Bake at 400 F for about 45 minutes, but start checking after 30 minutes.
