CHOCOLATE CHEESECAKE DE LUXE For 12

2 tbsp chocolate wafers, crushed
24 oz cream cheese
1 cup sugar
5 eggs
1 tbsp vanilla
6 oz semisweet chocolate, melted

Preheat oven at 450 F.
Grease 9" springform pan and spread crushed wafers over bottom and sides.
Beat cream cheese with Mixmaster at speed 1 ( this is very important to obtain a soft cake). Gradually add eggs and sugar, at same speed. Add vanilla and the still warm chocolate.
Bake at 450 F for 10 minutes, then lower temperature to 250 F and bake for 45 minutes longer.
Remove from oven, even if centre is still liquid. It will harden.
Cool in pan, then refrigerate overnight.

TOPPING:

2 oz semisweet chocolate
1 tbsp butter
1 tbsp water

Melt together in a double boiler. Spread over top and sides when of spreadable consistency.
