Amaretti

1/2 lb finely ground almonds
2/3 cup icing sugar
2/3 cup icing sugar
1/2 tsp almond essence
2 egg whites
almonds with skin off

Mix at Mixmaster speed 1 to 3, for 3 minutes.
Preheat the oven at 325 F.
With a teaspoon deposit round amounts on buttered aluminum foil, placed over a cookie sheet (it is going to be a sticky job). Flatten them a little, as you place an almond over each one.
Bake for 20 - 25 minutes.
Pull the aluminum sheet over a grate for quick cooling.
Keep in a closed jar. They keep for a few weeks.
