1- 9" dia. pie crust (perfectionists will make their own)
3 eggs
1 cup brown sugar, packed
1/2 cup corn syrup
1/4 tsp salt
6 tbsp rum
1/4 cup melted butter
1 cup pecan nuts, chopped coarsely
Some pecans halves
1/2 cup 35% cream
1 tbsp sugar
Preheat oven to 375 F (190 C).
Whip the eggs until pale yellow in colour and foamy.
Add the brown sugar, corn syrup, salt, and 4 tbsp rum. Mix with a wood spoon until the sugar is
dissolved and the ingredients are well mixed.
Add and mix the butter and the pecans.
Pour into the crust and decorate with the pecan halves.
Bake for 40 minutes.
Let it cool down to room temperature.
Serve with some cream on the side ( whipped with 1 tbsp sugar and 2 tbsp rum).
