UPSIDE DOWN PEACH CAKE
Preheat oven to 370 C.
This recipe makes 1- 8" x 14" and 1- 8" x 8" cakes.

3 tbsp butter or margarine
1/2 cup brown sugar, lightly packed
Peaches, sliced

Melt butter or margarine. Pour into baking pans. Sprinkle with lightly packed brown sugar. Cover bottom of pan with sliced peaches.

Cake Batter:

1 3/4 cups sugar
1 1/2 cups vegetable oil
5 eggs
1 1/2 cups milk
1 cup water
2 3/4 cups all-purpose flour
3 tbsp baking powder
1 tsp baking soda
1 pkg Lemon Cake Mix ("Betty Crocker" or "Added Touch")

Beat sugar and oil well.
Add eggs one at a time.
Add milk and water, baking powder, baking soda and flour. Mix.
Add package of Lemon Cake Mix. Blend well.
Pour into baking pans, over sliced peaches.
Bake for 40 - 45 minutes, then reduce the temperature to 325 F and bake for 15 minutes more.
Unmould after 10 - 15 minutes.
