Get out a REALLY BIG bowl.
1 cup margarine
1 cup shortening
1-1 pound box brown sugar
2 cups white sugar
4 eggs
2 tsp. vanilla
2 cups oatmeal
1 1/2 cups chocolate chips
1 or 1 1/2 cups butterscotch or peanut butter chips
4 cups flour
2 tsp baking soda
2 tsp baking powder 1 cup coconut
1 cup Pecans
2 cups rice Krispies or corn flakes.
Cream margarine and shortening, add brown sugar, sugar, eggs and vanilla. Sift and add flour, baking power and baking soda: add oatmeal, chocolate chips and butterscotch/peanut butter chips, pecans, coconut and cereal.
Use 1\4 cup measure for each cookie. Put on ungreased cookie sheet. Bake 15 minutes @ 350. Watch carefully so that they don't burn on the bottom. Note: I rotate the pans from bottom rack to top, seems to work best. Let cool for 5 minutes and remove to wax paper to cool completely. Makes 30 to 40 completely low calorie/low fat cookies.
Ok, maybe the low cal/low fat is stretching things a bit. but I have never once heard people complain about their diet when they were eating them!!
Enjoy...Jeanie.
