Black Bottom Cupcakes
Cream Cheese Mixture:
- 8 oz. Cream Cheese, softened
- 1 Egg
- 1/3 Cup Sugar
- 1/8 teasp. salt
- 1 Cup Mini Chocolate chips
Cake Mixture
- 1 1/2 Cups Flour
- 1 cup Sugar
- 1/4 Cup Cocoa
- 1/4 teasp. Salt
- 1 teasp. Baking Soda
- 1 Cup Water
- 1/3 Cup Oil
- 1 Tlbsp. Vinegar
- 1 teasp. Vanilla
Directions:
- Preheat oven to 350 degrees. Line muffin pans with paper liners.
- Beat cream cheese, egg, sugar, and salt. Stir in chips and set aside.
- Sift flour, sugar, cocoa, salt, and baking soda. Stir in water, oil, vinegar and vanilla and beat until smooth.
- Layer muffin cups as follows; 1/3 full batter, 1/2 teaspoon cream cheese mixture, 1/3 batter. repeat until all is used.
- Bake 15 to 20 minutes. Cool in pan
- Yields 48 Mini Cupcakes
