Baked Potato Soup
- 2/3 cup butter or margarine
- 2/3 cup flour
- 7 cups of milk
- 4 cups baked potatoes, cooled, peeled, and diced
- 4 green onions, sliced (tops included)
- 1-1/2 cups shredded cheddar cheese
- one cup sour cream
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 12 strips of bacon, fried crisp and crumbled
- In large pan, melt butter, stir in flour. Heat and stir until smooth.
- Gradually add milk, stir until thickened.
- Add potatoes and onions and bring to a boil, stirring constantly.
- Reduce heat and simmer for 10 minutes.
- Add remaining ingredients. Stir until cheese is melted.
- Reserve some of the cheese, sliced green onions and bacon for garnish.
- I usually just make extra bacon ,sliced onion and shredded cheese for
garnish.
