Our Favorite Spinach Pizza

or "Why order out when we can make better?"

This is an excellent pizza crust recipe, good as a thin or thick crust.  It likes to raise for a couple hours, but can be prepared right away too!  We like to make it at lunch time on Saturdays, and let it raise all afternoon for dinner.  The texture will be different if it doesn't raise as long, it will still make an excellent pizza.  Use it for Calzones too!


My own Pizza recipe:

1-1/3 cup warm water
2 tsp yeast 
1 tsp sugar
Proof this in a bowl ( I do this in my Kitchen Aid work bowl) until foamy

Add:
1/4 tsp salt
2 tsp veg oil (optional)
3-1/2 cups bread flour

Topping:
1 pkg fresh Spinach- blanched with water squeezed out.
1/2Lb. sliced mushrooms (white button)
1/2 or so Onion- finely minced
a fair amount of mozarella cheese (about a pound per pizza)
use a good pizza sauce! (we like Pastorelli best- avail Chicago area)

Adjust flour and water if necessary, knead about 15 mins (less if by hand, and you give up). Place in a plastic bag and allow to sit about 4 hours. Roll out for either a cookie sheet, pizza pan or stone.  

Top the crust with sauce, put down the other stuff (as much or as little as you want) save the cheese for last.  Sprinkle italian spices on the top.  Bake as hot as your oven goes (500-550) for about 10 mins or so.  Cool for a few minutes before slicing.  Can make two thin crust pizzas depending on size.
