-From San Jose Mercury- 4 Medium baking potatos 1 green onion, sliced 3/4 Cup grated cheddar cheese (divided) 1/4 Cup milk 1 6oz can, water packed tuna 1/2 cup light sour cream (or ranch dressing)Bake potato, 425 degrees for 45 min. (or microwave high for approx 10 min). When potatos are cooled enough to handle, cut in half lengthwise, scoop out most of insides. Place skins in baking dish or pan.
Add milk, and remaining ingredient (except for 1/4 cup of cheese). Stir. Spoon mixture into skins. Pile high if necessary. Sprinkle with remaining cheese. Bake uncovered for 20-30 min until brown and crispy and hot all the way through.
Country (beef ) Pie
Crust:
1/2 8oz can (1/2 C) tomato sauce
1/2 C bread crumbs
1 lb. Grd. beef
1/4 C chopped onions
1/4 C chopped green bell peppers
1 1/2 tsp. Salt
dash pepper
dash oregano
MARBLED PUMPKIN CHEESECAKE-By: Sunset Mag.-Serves:8-10 8oz Gingersnap cookies 2 TBSP sugar 3TBSP melted butter or margarine 2 8oz pkg light cream cheese (or reg.) 3/4 C firmly packed brown sugar 2 large eggs 1 1/2 tsp pumpkin pie spice 1 can (1 lb.) pumpkin |
Place 1/3 cookies in bag and crush with rolling pin., repeat until you have 1 3/4 cups crumbs. In a 9 in. cheesecake pan mix crumbs, sugar and butter. Press over bottom and 1 in. up sides. Bake crust in 325-degree oven for 15 min. With mixer, beat together the cheese and brown sugar until blended. Add eggs, beat well. Remove 1/2 cup and set aside. Stir in spices and pumpkin until well blended Pour pumpkin mixture into crust. Drop rounded spoonfuls of reserved mixture over pumpkin mixture. With sharp knife draw blade through to make marble pattern. Bake in 325-degree oven until center barely jiggles when cake is gently shaken, about 50 min. Cool on a rack. Cover and chill until cold, at least 2 1/2 hours. Run a knife around edge of cake and remove pan sides. |
Golden Peanut Butter Bars

2 cups Bisquick
1 1/2 cups brown sugar
3 eggs
1 tsp vanilla
2/3 cup peanut butter
1 cup semi-sweet chocolate chips
Heat oven to 300 degrees
Grease and flour 9x13x2. Mix all ingredients, except choc. chips. Stir in chips. Spread in pan. Bake until tooth pick comes out clean. Approx. 30 min. Sprinkle with powdered sugar while warm if desired. Cool; cut into 2x1 inch bars. Makes about 4 dozen.
