1/2 c Butter
1 1/4 c Granulated sugar
1 Egg
1 t Vanilla extract
1 t Orange extract
1/2 ts Grated orange peel
3 1/4 c All-purpose flour
1 tb Baking powder
1/4 c Milk
-----ICING-----
3 c Confectioners sugar
2 Egg white
3 tb Milk
3 ts Orange extract
Orange food coloring
Green food coloring
Preheat oven to 350 degrees. For cookies,cream
butter,sugar,egg,extracts,and orange peel in a large
mixing bowl. In a separate bowl,combine flour and
baking powder. Add the flour mixture to the creamed
mixture alternately with the milk. On a lightly
floured surface,use a floured rolling pin to roll out
the dough to 1/8"thickness. Trace carrot pattern onto
tracing paper. For each cookie place pattern on dough
and use a paring knife to cut around the pattern.
Transfer cookies to a lightly greased baking sheet.
Bake 8-10 minutes or until very lightly browned around
edges. Remove from baking sheet and cool on wire
racks. For icing,beat together sugar,egg white,milk
and extract until smooth. Stir in food coloring. Ice
carrots allow icing to set 30 minutes;then use
decorating icing to pipe greenery on carrots. Since I
cannot send the pattern to you I will try to explain
it-it almost looks like an arrow head with a short fan
on the end of it-does that make sence?????The cookie
is about 3"long and 1 1/4 at the widest point,it would
be much simpler to find a carrot shaped cookie
cutter-does anyone know if they make such a thing??
They make everything else.
