                             Apple Cider Ice

  10      cups          Unfiltered apple cider
                        Peel of 1 orange
   2                    Cinnamon sticks
   1      pinch         Grated nutmeg - (lg pinch)
   6                    Whole cloves
     1/2  cup           Calvados or apple brandy
   2 1/2  cups          Sugar syrup
                        (2 cups water and 1/2 cup sugar, heated
                        until sugar dissolves)
   4      cups          Sparkling cider
   4      teaspoons     Apple cider vinegar
   2      tablespoons   Freshly-squeezed lemon juice

   In a large heavy-bottomed saucepan, combine all the ingredients.  Heat until the mixture begins to simmer.  Decrease to medium-low heat and let the mixture steep and reduce (but do not let boil) to 8 cups, about 1 hour.  Refrigerate until cold.
   Pour reduced liquid into a shallow pan.  Freeze, stirring every 1/2 hour, until hard, about 3 to 4 hours.
   This recipe yields 2 quarts.
