1 envelope dry yeast
1/4 cup warm water
pinch sugar
3 1/2 cups flour
2 cups whole-wheat flour
1 cup cornmeal
1 cup rye flour
1/2 cup dry milk
4 teaspoons kelp powder
4 cups beef or chicken broth
1 large egg
2 tablespoons milk
Sprinkle the yeast over the water (100 degrees). Add a pinch of sugar and allow the yeast to sit in a draft-free spot for 10-20 mins. The mixture should be full of bubbles. If not, the yeast is to old. Stir well to dissolve the yeast.
In a large bowl, place all the dry ingredients and stir to blend them. Add the yeast mixture and 3c of the broth. Using your hands, in the bowl, mixt to form the dough, adding more broth if needed to make the dough smooth and supple. You can use a Kitchen Aid to make this go faster.
Half a batch at a time, knead the dough briefly on a lightly floured counter, covering the other half with a moist towel.
Roll the dough into an 18"x13"x 1/4" rectangle. Cut into desired shapes, using a bone cookie cutter or a 2 1/2" round cookie. Reroll the scraps. Repeat the procedure until all remaining dough is gone.
For an atractive shine, lightly beat together the egg and milk. Brush the glaze on the cookies.
Bake for 45-60 mins or until brown and firm in a 300 oven. For even baking, rotate the cookie sheets from top to bottom 3/4s away thru the baking period. Cool on a rack.
