HONEY
BUTTERMILK BREAD
1 pkg yeast
3 cups bread flour
1 1/2 tsp. salt
3/4 cups buttermilk
3 Tbsp. honey
1 Tbsp. butter
1/2 cup warm water
Mix per your directions
for your machine.
OAT
BRAN CARROT BREAD
1 pkg. yeast
1 cup rolled oats (quick
cook)
1 1/2 cups bread flour
2 1/4 cups oat bran
1 3/4 cups whole wheat flour
4 Tbsp. gluten
2 Tbsp. wheat germ
1 tsp. salt
2 Tbsp. veg oil
3 Tbsp. honey
2 egg whites
1 1/2 cups grated carrots
2 cups plus 2 Tbsp. very
warm water
This makes a 3 to 4 lb.
loaf, so unless you have a very large bread machine,
mix it by hand and let it
rise and bake in 2 loaves.
OAT
BRAN AND FRESH APPLE BREAD
1 pkg. yeast
1 cup quick rolled oats
1 1/2 cups bread flour
2 1/4 cups oat bran
1 3/4 cups whole wheat flour
4 Tbsp gluten
2 Tbsp wheat germ
1 tsp. salt
1 tsp. cinnamon
2 Tbsp veg oil
2 egg whites
2 Tbsp honey
2 cups freshly grated apple
1 1/2 cups very warm water
Mix by instructions for
your machine. A very large loaf 3 to 4 lbs.
You might prefer to mix
by hand, let rise once, and bake in two pans.
SQUAW
BREAD
1 pkg. yeast
1 Tbsp brown sugar
2 cups bread flour
1 cup whole wheat flour
1 cup rye flour
1/4 cup nonfat dry milk
powder
1 1/2 tsp. salt
Liquefy in blender
1 1/4 cups warm water
2 3/4 Tbsp veg oil
2 Tbsp honey
2 Tbsp raisins
2 Tbsp brown sugar
Add to machine according
to manufacturers directions.
Or hand mix, let rise and
bake in two loaves.
CALIFORNIA
DIP BREAD
1 pkg. yeast
3 1/3 cup bread flour
1/4 tsp. baking soda
1 egg
3/4 cup cottage cheese
3/4 cup sour cream
3 Tbsp sugar
1 1/2 Tbsp butter
1/4 cup water
1 envelope Lipton’s onion
soup mix
Mix as directed for your
bread machine or by hand, let rise, and bake in two loaves.
Zucchini
Bread
3 cups shredded zucchini
(about 3 medium)
4 cups all-purpose flour
1 cup plus 2 Tbsp granulated
sugar, divided
1/2 cup chopped walnuts,
toasted
1/4 cup packed brown sugar
5 tsp. baking powder
1 Tbsp grated lemon rind
1 1/2 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. ground nutmeg
1 1/2 cups skim milk
6 Tbsp vegetable oil
2 tsp. vanilla extract
2 large eggs
Cooking Spray
1) Preheat oven to
350°F
2) Press zucchini
on several layers of paper towels. Cover with additional paper towels;
set aside
3) Combine flours,
1 cup granulated sugar, walnuts, and next 6 ingredients (walnuts through
nutmeg) in a large bowl; make a well in center of mixture.
Combine milk, oil, vanilla, and eggs in a bowl; stir with a whisk.
Add zucchini; stir. Add to flour mixture; stir just until
moist. Divide batter evenly between 2 (8 a 4-inch) loaf pans coated
with cooking spray. Sprinkle each with 1 tablespoon granulated sugar.
Bake at 350°F. for 1 hour and 10 minutes or until a wooden pick inserted
in center comes out clean. Cool 5 minutes in pans on a wire rack;
remove from pans. Cool completely on wire rack. Yield:
25 servings (serving size: 1 slice [12 slices per loaf]).

2 cups Sugar
1 1/2 tsp. Soda
1 1/2 cups oil
2/3 cup Buttermilk
2 Eggs
3 Bananas-mashed
3 cups Flour
1/2 cup Nuts-chopped
1/2 tsp. Salt
Cream sugar and oil, add
all up to soda. Mix soda and buttermilk then add everything altogether.
If you don't have buttermilk, you can mix 1T Lemon juice into regular milk
then add the soda. Bake in two well greased loaf pans. Bake
at 350°F for and hour...check after 45 minutes for doneness--depends
on oven.
French
Bread
5 1/2 - 6 cups flour
1 Tbsp.. salt
3 Tbsp. sugar
2 pkgs. yeast ( I use 3
Tbsp.. )
3 Tbsp.. shortening
2 cups very hot water
Mix dry ingredients together.
Add hot water and shortening. Knead for about 5 minutes or until smooth.
Divide into 2 or 3 pieces, depending on size of loaves you want.
Roll out and then roll up like a jelly roll, tapering the ends. Brush
each loaf with egg white if desired and top with sesame seeds, or whatever
you like.
Bake at 400°F for 20
minutes. Sometimes I roll some pepperoni and provolone or mozzarella
cheese inside if this.
English
Muffin Bread
2 cups milk
1/2 cup hot water
5-6 cups flour
2 pkgs. yeast ( I use three
Tbsp..)
2 tsp. salt
1/4 tsp. baking soda
cornmeal
Mix flour, yeast, sugar,
salt and baking soda. Add warmed liquids. Gradually add remaining flour.
Knead 3 - 5 minutes. This dough will be sticky.
Put into 2 bread pans that
have been greased and dusted with the cornmeal. Cover and let rise
for 45 mins.
Bake for 25 mins. at 400°F.
Remove from pans immediately.
** I use hot water and some
powdered milk instead of the milk. I also make this in small coffee
cans sprayed with pam and dusted with cornmeal, this makes the slices just
right for the toaster, and they look like english muffins.
Basic
White Bread
2 cps hot tap water
6 - 7 cps flour
1 egg
1 Tbsp.. salt
1/4 cup honey
Mix hot water with 3 cps
flour, mix to make batter. Add egg, salt, honey. beat until smooth.
Set aside.
2 pkgs. yeast
1/2 cup warm water
2 Tbsp.. flour Combine and mix well. Let stand until bubbly
1 tsp. honey 10 -
15 mins.
Add yeast mixture to batter.
Gradually add remaining flour. Knead 8 mins.
Let rise 20 mins.
Shape and put in greased pans. Let rise 30 mins. in warm (100°F oven)
Raise temp to 375°F. Bake 40 - 45 mins.
** I buy a big bag
of yeast at Sams, so I use three Tbsp. in this recipe rather than packets.
I don't usually put the egg in either. This calls for three pans,
but I use three.
Caraway
or Poppy Seed Bread
Preheat oven to 375°F.
1/4 cup butter or margarine
1 beaten egg
1/4 tsp. salt
3/4 cup milk
3/4 cup vanilla
3/4 cup sugar
1 2/3 cup flour
2 1/2 tsp. baking powder
1 Tbsp. caraway or poppy
seed
Cream butter or margarine
and sugar together.
Add egg and vanilla and
mix gently.
In a separate bowl, combine
flour, salt, and baking powder. Sift well.
Combine flour mixture with
sugar mixture, alternately adding milk.
Bake in loaf pan for 45
minutes.
