Chunky Bar-B-Q Beef
1 3/4 lbs. lean beef, cut in small cubes
1-1 1/2-oz. package dry onion soup mix
2 1/2 cups tomato juice
1/2 cup water
1/2 cup ketchup
salt and pepper to taste
Preheat oven to 325 degrees. Brown meat in large skillet sprayed with
vegetable pan spray. Add remaining ingredients. Mix; place in a 2-quart
casserole. Cover. Bake for 2 hours. More water may be added if desired.
Yield: 8 servings Serving suggestion: Serve over rice, noodles, or
potatoes; 1/2 cup adds one Bread Exchange.
