Title: Peanut Sticks

2 c Quick-cooking oatmeal
1/2 c Finely ground salted peanuts
1 tb Granulated fructose
1 ts Baking powder
1/4 c Peanut butter
2 Eggs

Use a vegetable spray to lightly grease a 7 x 11
inch baking pan. Combine dry oatmeal, ground peanuts,
fructose, and baking powder in a small bowl. Mix
slightly. Beat peanut butter and eggs together
thoroughly. Stir into dry mixture until thoroughly
mixed. Transfer mixture to greased baking pan. Use
the back of a spoon to press mixture evenly into the
bottom of the pan. Bake at 350 degrees F for 15
minutes. Remove from oven. Cut into 27 sticks, and
transfer to cooling rack.
YIELD: 27 sticks
