2 Tablespoons Butter, Unsalted -- melted
Cake Flour -- for dusting pan
2 Large Eggs -- separated
1/2 Teaspoon Salt
1/2 Cup Sugar
1 Tablespoon Canola Oil
2 Teaspoons Lemon Zest -- grated
2 Teaspoons Lemon Juice
1/4 Teaspoon Lemon Extract
1/2 Cup Plus
1 Tablespoon Cake Flour -- sifted
Confectioner's Sugar -- for dusting
1) Preheat oven to 375 degrees. Brush 24 madeline molds or mini-muffin
type pans-cups (or work in batches with as many pans as you have) with 1
tablespoon melted butter. Dust molds lightly with a little cake flour,
tapping out excess.
2) In medium bowl, with electric mixer on medium speed, bet together egg
whites and salt until soft peaks form. Beat in 3 tablespoons granulated
sugar until whites for stiff and glossy peaks.
3) In a second medium bowl, combine egg yolks, remaining 1 tablespoon
melted butter, and 5 tablespoons sugar. With mixer on medium speed, beat
until light and fluffy, about 2 minutes. Add oil, lemon zest, lemon juice,
and lemon extract and beat until creamy, about 1 minute. Reduce mixer
speed to low and beat in flour until just combined.
4) Fold about one quarter of whites into yolk mixture. Fold in remaining
whites until just combined. Drop 1 tablespoon of batter into each prepared
mold.
5) Bake in 375 degree oven until golden around edges and tops spring back
when lightly touched, 13 to 15 minutes. Cool madelines in molds on wire
rack for 2 minutes. Loosen edges with a paring knife and remove cakes from
molds to cool completely. Dust with confectioner's sugar. Serve.
