8 Bananas
2 tb Lemon juice
1/2 c Honey
2 tb Applesauce
1/2 c Water
4 c Whole wheat flour
2 tb Defatted soy flour
1 ts Baking powder
1 ts Baking soda
1 ts Vanilla
Mash bananas and mix with lemon juice. Add honey and applesauce,
mixing together. Add 1/3 cup water. In a separate bowl, stir
together the dry ingredients. Add to the banana mixture. Add
vanilla and other optional ingredients if desired (nuts). Dough will
be stiff. Put the dough into a non stick loaf pan. Bake at 375F for
35 to 40 minutes.
Helpful Hints: This will make 1 extra large loaf or 2 medium loaves.
This is quick and easy to make with an electric mixer.
