Nonstick Vegetable Oil Spray
1 Cup Flour, All-Purpose
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
1/2 Cup 70% Buttermilk-Vegetable Oil Spread -- at room temperature
2/3 Cup Light Brown Sugar -- packed
2 Large Egg White
1 Teaspoon Vanilla Extract -- pure
1 1/3 Cups Cranberries, Dried
1 Cup Rolled Oats
1) Preheat oven to 350 degrees. Lightly coat baking sheets with non-stick
cooking spray.
2) In medium bowl, stir together flour, baking soda, and salt.
3) In second medium bowl, with electric mixer on medium speed, beat
vegetable oil spread until smooth and creamy, 1 to 2 minutes. Beat in
brown sugar until light and fluffy, 2 to 3 minutes. Beat in egg whites one
at a time until well combined. Beat in vanilla. Add flour mixture and stir
by hand until flour is no longer visible. Stir in cranberries and oats.
4) Onto prepared baking sheets, drop batter by slightly rounded teaspoons,
spacing them about 1 1/2 inches apart.
5) Bake in 350 degree oven until light golden brown, 10 to 12 minutes.
Remove to a wire rack to cool. Cookies can be stored in airtight container
for up to 2 days.
