Rabbit recipes
Here is the recipe that Leslie used this year for special
foods. You could use ground hamburger instead of ground
rabbit. She recieved $5 from the SDRBA for using rabbit
in the recipe that she took to the state fair. She got a
blue on her special foods, couldn't remember all the
nutrition facts!
RABBIT CUPCAKES
1/2 Pound ground rabbit
1/2 cup mushroom soup
1/8 cup chopped onion
1/2 egg beaten
1/4 cup grated cheese
1/4 cup bread crusts or crumbs
salt and pepper lightly.
Combine all ingredients mixing well. Trim crusts off
8 bread slices buttered on one side.
Place in muffin tins buttered side down, and shape in.
Fill full with meat mixture and bake at 350 in oven for 30-40 minutes
