Texas Brownies


Taken from Great American Recipes-with modifications



Brownie Ingredients

2 c all-purpose flour
2 c sugar
1/2 c margarine
1/2 c shortening (I use Butter Crisco)
1 c water
1/4 c unsweetened cocoa (powdered)
1/2 c milk+2 tsp lemon juice
2 eggs
1 tsp baking soda
1 tsp vanilla

Brownie Frosting

1/2 c margarine
2 TBL unsweetened cocoa (powdered) 1/4 c milk
3 1/2 c powdered sugar
1 tsp vanilla

Preheat oven to 400'. Butter jelly-roll pan well with Butter Crisco.

In a large microwavable dish, heat margarine, shortening, water and cocoa to boiling (stir occasionally). In a large bowl, combine flour and sugar. Add boiling mixture (very carefully!) Combine thoroughly (careful it doesn't splatter on you!) Add the milk mixture, eggs, baking soda and vanilla. Combine thoroughly.

Carefully pour mixture into well buttered jelly-roll pan. Bake at 400' for 20 minutes or until brownies test done in center (toothpick comes out clean...no, don't bake with toothpick in it!)

As brownies cool, heat margarine, cocoa and milk until boiling (stir occasionally). Place powdered sugar in a large bowl and add boiling mixture and vanilla. Beat until smooth. (Be careful the hot frosting doesn't splash out when you start beating.) If the frosting is too thick, add 1/2 tsp milk and beat again. If the frosting is too thin, add more frosting until nice spreading consistancy.

Spread frosting over warm brownies and enjoy! They are addicting!
