Hot Buttered Rum Muffins
1/2c. butter, softened
1/2c. sugar
2 lgg. Eggs
2c. flour
2t. baking powder
½ t. salt
1/8 t. cloves
1/8 t nutmeg
½ c. milk
5t. rum
3t. sugar
Directions:
Beat butter at medium speed until creamy. Add ½ cup sugar, beaat well. Add eggs one at a time, beat just until blended after each egg.
Combine flour and next 4 ingredients.
Combine milk and 3T. rum .
Add flour mix to butter mix altenatley with milk mix.
Beat at low speed after each addition. Spoon into greased muffin pans ( ¾ full ) Bake at 375 for 20-25 minutes. Untilo golden. Remove from pan immediately, cool on wire rack. Combine remaining 2T. rum and 3T sugar in small saucepan: cook over low until sugar dissolves. Brush over warm muffins.
