Vanilla Muffins
Ingredients
2 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 (8-ounce) container vanilla
low-fat yogurt
1 large egg
1/4 cup milk
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 tablespoon sugar
Combine first 5 ingredients in a large bowl; make a well in center of mixture.
Stir together yogurt and next 4 ingredients.
Add to dry ingredients, stirring just until moistened.
Spoon evenly into muffin pans coated with vegetable cooking spray; sprinkle tops evenly with 1 tablespoon sugar.
Bake at 400° for 18 minutes or until golden. Remove from pans immediately; cool on a wire rack. Makes 1 dozen.
