3 cups flour
2 cups sugar
1 tsp baking soda
1 tsp cinnamon
3/4 tsp salt
1 cup macadamia nuts, chopped
3 eggs, beaten
1 cup vegetable oil
2 cups mashed bananas
2 tsp vanilla extract
8 oz can crushed pineapple, drained
In a large bowl, combine the flour, sugar, baking soda, cinnamon, and salt; stir in nuts. In a separate bowl, combine remaining ingredients; mix well. Pour wet mixture into dry mixture, stirring just until dry ingredients are moistened. Spoon batter into 2 greased and floured 8x4" loaf pans. Bake for about 1-1/2 hours at 350 degrees. Cool in pan for 10 minutes, then remove from pans to cool completely.
