Use the wide mouth canning jars, either the pint size or the 12 oz size. Be sure not to use jars that get narrow at the top, or you won't be able to get your cakes out. Always use new lids and rings.
Try the recipes I have here, or experiment with any 'quick bread' recipe. Just be sure to fill the jars only half full, and don't bake any higher than 325 degrees.
After the cakes are cool, you can decorate them if you wish. Remove the ring and cut a piece of material 1"-2" larger in diameter than the lid. You can add a piece of cotton under the material to make it a little puffy. Lay it over the lid and screw the ring back on. Tie a ribbon or piece of raffia around the top of the jar. These make a great gift!
