1-1/2 lbs pork shoulder or butt cut in 1-1/2" cubes
1/3 cup vinegar
2 Tbs soy sauce
1 tsp salt
3 cloves garlic, minced
1 bay leaf
1/4 tsp pepper
1/2 cup water
2 Tbs vegetable oil
Combine all ingredients, except oil, in skillet and let stand for 30 minutes. After 30 minutes, simmer, covered for one hour, or until meat is tender. Remove bay leaf, drain meat and reserve sauce. Add 2 Tbs oil to skillet and brown meat on all sides. Spoon into serving dish. Add reserved sauce to skillet and cook for 1 to 2 minutes, scraping all the browned bits sticking to pan. Pour sauce over meat and serve over white rice.
