2-3/4 to 3 cups flour
1 pkg dry yeast (2-1/4 tsp)
1 cup warm water (120-130 degrees)
2 T olive oil
1 tsp Italian herbs (optional)
1/4 tsp salt
pizza sauce
filling ingredients such as:
pepperoni, cooked sausage - crumbled, mushrooms, sliced green pepper, olives, mozzarella cheese, etc.
Combine 1-1/4 cups flour, yeast, herbs and salt. Add warm water and oil. Beat with mixer for 3 minutes. (I use a food processor, it really cuts down the kneading stage) Mix in remaining flour, adding more or less as needed to make a soft dough that is not too sticky. Turn dough out onto a floured surface and knead until dough is smooth and elastic, about 6-8 minutes. Divide dough into 6 pieces, cover with plastic wrap and allow to sit while preparing filling ingredients. Roll each piece of dough into an 6-7" circle. Spread with pizza sauce and add fillings. Be generous, these really expand. Moisten edges of dough with water and fold over. Press edges with tines of a fork to seal. Prick top. Brush top with milk and sprinkle with Parmesan cheese. Bake at 375 degrees for 30-35 minutes or until lightly browned.
