1 lb chicken thigh meat
1/3 cup soy sauce
4 Tbs sugar
1 Tbs ginger, finely chopped
12 bamboo skewers
Cut chicken into thin strips. Combine soy sauce, sugar and ginger in a medium-size bowl. Reserve a few tablespoons sauce in a separate bowl for brushing on cooked chicken. Add chicken to marinade and mix well. Let stand for 60 minutes. Drain and discard marinade. Preheat oven to 350 degrees. Thread chicken pieces onto bamboo skewers. Place chicken on a baking sheet and bake for 15 minutes. Remove from oven and brush with reserved (unused) marinade one more time.
