LIGHT TURKEY POT PIE
Use some of your holiday leftover turkey to make a good hearty meal. You'll need these ingredients:
1 Can of low-fat cream of chicken soup
1 Cup of turkey, chopped
1 Bag of frozen mixed vegetables
1¼ Cup all-purpose baking mix (regular or low-fat)
½ Cup low fat or skim milk
1 Egg or egg substitute to equal one egg
Preheat oven to 400 degrees. Combine soup, turkey, and vegetables in a nine-inch pie plate that you've sprayed with a non-stick spray. Mix together remaining ingredients, pour over turkey mixture, and bake about 30 minutes. Double the recipe for two pies.

LOW-FAT SOUTHERN CORNBREAD DRESSING
With just a few substitutions, you can make delicious low-fat stuffing for your holiday bird. You will need:
2 packages low or nonfat cornbread mix
5 cups bread croutons or prepackaged seasoned stuffing mix
8 slices cooked turkey bacon (low-salt or low-fat), broken into small pieces
2 cups diced celery
1 cup diced onion
2-3 cans fat-free chicken broth
2 T fresh parsley
2 tsp poultry seasoning (less if you use seasoned crumbs)
Prepare cornbread per package directions. Crumble and mix with croutons or crumbs. Preheat oven to 325 degrees. In a nonstick skillet sprayed with butter-flavored spray, add a little chicken broth and saute onions and celery till tender. In a large bowl, combine remaining ingredients and add the onion and celery. Stir in the cornbread mixture, toss gently; spoon into a covered pan or dish and bake about one hour.
