HAM-CHEESE OVEN OMELET

8 Eggs
1 c. Whole milk
˝ tsp. Mrs. Dash salt substitute
˝ tsp. salt
1 pkg. (3 oz.) smoked sliced ham, torn in pieces
1 c. Shredded cheddar. Swiss or mozzarella cheese (4 oz.)
3 tbs. Finely chopped onion

Beat eggs, milk, Mrs. Dash, salt.  Stir in remaining ingredients. Pour into greased oblong pan (12 x 7˝ x 2) or square baking dish (9 x 9).  Cook, uncovered, in 325° F oven until omelet is set and top is golden brown.  Takes about 45 minutes.
Serves 6.

Do-ahead tip: After pouring into baking dish, cover and refrigerate omelet no longer than 24 hours.  Recipe can also be doubled.  Double all the ingredients and cook in greased oblong baking dish (13 x 9) for about 50 minutes.

CRAB OMELET

1 tsp. Margarine
1 can Crabmeat - small
1 tsp. Dry onion flakes
1/4 tsp. each Dry parsley and celery flakes
1 can Mushrooms, drained - small
3-4 Eggs, well beaten
Slices of sharp Cheddar cheese
Sliced fresh tomato

Melt margarine in a frying pan. Sauté crab meat, seasonings and mushrooms until lightly browned.  Add eggs, salt and pepper. Top with cheese slices and tomato.  Cook, covered, on low heat until eggs are set.

BROCCOLI QUICHE

9" Unbaked pie shell
˝ c. Chopped scallions (green onions)
2 c. Cooked broccoli, chopped fine
3 Eggs
1 1/4 c. Half and half (or 1 can evaporated milk)
1 c. Shredded cheddar cheese
1/4 tsp. Salt
1/4 tsp. Pepper

Lightly sauté scallions in a little oil and scatter with broccoli over pie shell.  Whisk eggs and cream together.  Stir in cheese, salt and pepper. Pour into pie shell.  Bake 30-40 minutes at 375° or until puffed and light brown on top. Note: You may add mushroom, crab or ham to the quiche for delicious variations.

APPLE PANCAKE

Prepare Apple mixture:
Melt 3 tbs. butter
Peel and slice 3 apples into small pieces
Add apples to butter
Add 3 tbs. sugar
˝ to 1 tsp. cinnamon
Cook until apples are tender. Be sure to stir occasionally.

Prepare Pancake mixture:
Prepare one recipe of your favorite pancake batter (I use Jiffy). Add 2 eggs and 3 tbs. sugar. Stir until blended.  Do not over beat. Pour batter into 9" prepared spring bottom baking pan (I use Pam).  Spoon apples over top of batter.  Pour any remaining liquid evenly over apples.  Bake at 350° for 30 minutes.  Top should be golden brown.  Knife should come out clean.

APPLE PUFFED PANCAKE

6 Eggs
1 ˝ c. Milk
1 c. All purpose flour
3 tbs. Sugar
1 tsp. Vanilla
˝ tsp. Salt
1/4 tsp. Ground cinnamon
1 Stick of butter or margarine
2 Large apples, peeled and thinly sliced
2 tbs. Brown sugar

Combine eggs, milk. flour, sugar, vanilla, salt and cinnamon.  Whisk with a wire whisk until blended.  Batter will be a little lumpy.  Place butter in 13 x 9 baking pan.  Place in oven until butter melts.  Add apple slices and bake until butter sizzles (do not allow butter to brown).  Remove dish from oven.  Pour in batter and sprinkle with brown sugar.  Bake 20 minutes or until nicely browned and puffed.  Serve immediately.
Makes 6 large servings.

BREAKFAST CASSEROLE

˝ Loaf bread cubed
6 Eggs
1 c. Shredded cheddar cheese
1 can Mushrooms, sliced
1 lb. Sausage, ham or bacon
2 c. Milk
1 tbs. Dried onions

Mix eggs and milk with bread.  Add salt, cheese, mushrooms and meat.  Bake in 350° oven for 45 minutes.
Serves 6

PaPpYEGGS

4 Eggs
˝ Bottle of Becel
margarine
12 Raw pork sausages
Banana
Tomato

Add ˝ bottle of Becel margarine to fry pan.  Add 12 sausages for 5 minutes.  Then break and drop in 4 large eggs and scramble until done.  Add 3 tomatoes sliced and ˝ a banana.  Make an appointment immediately with the doctor !!!!!
