Shrimp
Toasts
Ingredients:
- 4
slices white bread
- 125
g (5 oz.) shrimp (shelled)
- 25
g fat pork
- 1
spring parsley
- oil
for deep-fat frying
Seasoning:
- ½
tsp salt
- ½
tsp sugar
- 1
tsp cornflour
- 1
tsp wine
- dash
of pepper
Method:
- par-boil
fat pork for 1 min. Drain well.
- remove
crust of bread. Cut diagonally into 2 or 4 triangles.
- rub
shelled shrimps with salt. Clean and dry. Crush with the blade of the
chopper.
- dice
fat pork finely. Mix well with shrimps. Season.
- clean
parsley.
- spread
shrimp mixture on top of bread. Garnish w/ parsley.
- deep
fat fry shrimp toast w/ the shrimp mixture facing downwards till golden
brown. Dish up and serve hot.
