Apple Sauce

Yield: 375 ml

Ingredients:
2 large firm green apples, peeled, cored and cut into eights
60 ml water
sugar to taste
45 ml lemon juice

Method:
1. Put apples and water into a saucepan.
2. TLurn heat to medium and cook, stirring often, until the apples become tender, 5 or 6 minutes.
3. Add sugar and lemon juice and stir to blend well.
4. Cook another 1 - 2 minutes.
5. Remove from heat. Mash with fork.
6. To serve, spoon applesauce into botton of parfait or sherbet glass. Add a dollop of French vanilla yogurt if desired. Top with caramel oatmeal topping.
