Baked Bananas
Yield: 3
Ingredients:
37 ml butter, melted
22 ml fresh lemon juice
3 firm, ripe bananas
37 ml brown sugar
2 ml cinnamon or ground ginger
125 ml grated coconut
Method:
1. Preheat oven to 375oF.
2. Spread melted butter and lemon juice over the bottom of a shallow baking dish (must hold 3 bananas). Stir together until blended.
3. Put bananas in dish and turn them until coated with butter mixture.
4. Combine sugar and cinnamon (or ginger) in a small bowl.
5. Sprinkle sugar mixture evenly over bananas.
6. Bake for 18 - 20 minutes or until the butter bubbles a little.
After 10 minutes turn bananas over.
After 13 minutes (or 5 minutes before they are done), sprinkle coconut over the bananas.
7. Serve warm with a little cream or maple syrup and a sprinkling of caramel oatmeal topping. |
