Breakfast Strudels
Ingredients:
15 ml butter
15 ml flour
125 ml milk
1/2 ml salt
1/2 ml pepper
3 eggs, lightly beaten
125 ml Cheddar Cheese
125 ml diced ham
15 ml fresh parsley
5 ml green onions
1 ml dried thyme
4 sheets phyllo pastry
25 ml butter, melted
50 ml Parmesan Cheese
Method:
1. In a frying pan, melt butter over medium heat; stir in flour.
2. Gradually whisk in milk; cook, stirring constantly, for about five minutes or until smooth and thickened.
3. Add cheese, salt and half the pepper; stir until cheese is melted Set aside.
4. In a electric frying pan over medium heat, stir together eggs, ham parsley, thyme, remaining pepper and pinch more salt; cook, stirring almost constantly, for about 3 minutes or until eggs are scrambled and just cooked but still moist.
5. Stir into cheese sauce. Let cool.
6. Place 1 sheet of the phyllo on work surface, keeping remainder covered with some of the butter.
7. Brush sheet lightly with some of the butter.
8. Fold in half lengthwise; brush lightly with some of the butter. |
