Chinese Green Onion Pancake
Ingredients:
Dough
500 ml all purpose flour
200 ml warm water
15 ml vegetable oil
Filling
20 ml vegetable oil
10 ml sesame oil
3 ml salt
3 ml white pepper
2-3 stalks green onion
Method:
1. Measure and sift flour. Make a well in the flour.
2. Add warm water and 15 ml oil all at once and mix with a fork (add more water if needed).
3. Place dough on a lightly floured pastry board and knead into a ball.
4. Place dough back in bowl, cover with a damp cloth, and allow to rest 15 - 20 minutes.
5. Wash and chop green onions and set aside. Mix the 20 ml vegetable oil and 10 ml sesame oil together and set aside. Mix the salt and white pepper together and set aside.
6. Divide dough into flour equal pieces.
7. Rough out each piece of dough into a rectangle about 2 mm thick.
8. Using a pastry brush, spread the sesame oil mixture on each piece of rolled dough leaving 2 - 5 cm along one edge.
9. Sprinkle green onion, and ten salt/pepper mixture on top of spread oil.
10. Roll long side without oil, using both hands, and stretch it gently to make it longer.
11. Roll into a fat roll. Turn onto its side and flatten with yoru hand.
12. Pat dough into a circular shape about 4 mm thick.
13. Heat frying pan with about 15 ml oil on medium-high heat. When hot, put in pancake.
14. When golden brown, flip over, cover, and cook aobut 2 - 3 minutes or until golden brown again.
15. Cut into four pieces and serve. |
